My only experience are the tracks that Polaris contracted out and sold through their accessory catalog since I worked at a dealer.
I did ride an 800 with them on, and this is what I noticed. They go anywhere and everywhere. The local snowmobile rental group has a quad with tracks to fetch their stuck rental sleds in the mountains, cause it goes places sleds get stuck in.
With that said, steering on hard pack is noticeably harder. Snow and mud it's easier to steer, but hardback, gravel, it takes more effort to turn.
It also cuts your top speed in half roughly. And that's because the tracks are geared down. They do that so you still have comparable acceleration to tires, and also it does take a lot of the stress away from components you are concerned about, so it makes it basically a non-issue.
