I have a 04 sportsman 500 HO that when I turn the handlebars all the way to the right, the motor dies. I'm thinking its a wiring issue but just wanted to throw it out here to see what else you guys think it could be.

Have you checked your ETC I think it's called. It's the little black box on the bar at the throttle that will sense a broken cable and make the bike quit. Maybe this cable is getting a little more slack when the bars are turned all the way to the right and causing the points to touch inside the little box which will shut it off. You can adjust it by following the cable down to the pod and adjust it longer or shorter. Remove the box cover so you can see what your doing.
Other wise, I think it's definitely a wiring issue.
I had the same problem. It turned out my key fob was grabbing the gas cap and killing the engine. Try it, it sounds stupid but I got rid of the fob and it never happened again.

make sure there is no key chain on key, if not, take front plastic off and start takin wires out of wire loom where they go around steering stem, must be one broke, they get them too tight from factory
