What size bike do you plan to put the tires on? What maxxis tire do you have on it now?
Normally, you can go one size larger without robbing too much power, this depending on the weight of the tire and if they are bias ply or radial(the radial being heavier by nature).

I went from my stock terrathon's to ITP 27" XTR's close to 2 year's ago and hardly noticed any power loss at all. Great tires for what I use them for!

I'm betting that the 27" BD tires are considerably heavier, and probably considerably taller than the stockers.
Taller tires raise the gearing on the machine. The XP's are already geared pretty high, so raising the gearing is probably not the best thing, unless you do a lot of high speed touring. The good news is, with an 850 class machine, you've got a lot of power to overcome the loss in gearing.
The added weight of the tires contributes to rotating mass at the 4 corners. It has been said that for every pound extra in weight on tires, it's like add 4 pounds at each corner. That can end up being a lot of weight. Again, the good news, an 850 class machine is not going to suffer much because of the added weight/rotating mass. Plus adding weight down low on all 4 corners is great for stability and traction.
With all the said, the stock tires are purely unacceptable, and the cheapest means for the manufacturer to get it out the showroom floor. If it were me, I would probably go with a quality 26" tire replacement, but the 27" BD will probably be fine.
