There are many opinions about tires out there, so expect a lot of different advise. I'll say that bighorns usually get a ton of votes in these types of posts.
That being said, I've got the GBC spartacus and think they are great all around especially in the mud/snow. They ride smooth on pavement and hardpack, and grip rocks pretty well considering they're a "mud" tire. I've hit the sidewalls hard a few times and thought I'd blown it only to look down and see nothing, not even a bruise. I went with stock size, 25x8x12 and 25x10x12 and they are a little oversize. Any bigger and I'd need spacers on stock wheels. They are heavy so you might lose a little power, but depending on how you ride you might not care. My .02, good luck with your decision!
