I know exactly what you mean.
I will tell you how I did it on my 2011 850, but it also disables the throttle safety switch. I didn't care about that, but just so you know.
Simply remove the four screws from the cover on your throttle and remove the cover. Inside you will see two wires with button heads on them, that contact each other when the throttle is closed. Squeeze the throttle lever, and you will see them gap. Take a piece of electrical tape, roll it up and drop it between the button heads so they can no longer make contact when you let off the throttle. Very simple to understand once you get the cap off and take a look inside. That's all it takes. No reason to replace the pinion cover when a piece of tape will do the trick.
